Featured recipe: Laura’s Baked
Omelette with Fresh Salsa
Serves: 8-10 | Meal type: Breakfast | Time: 35-40 Mins
This month, Laura’s sharing one of her go-to breakfast favourites: a beautifully simple baked omelette, perfect for feeding a hungry table of family or friends. It’s quick to prep, easy to customise, and ideal for laid-back mornings when you want something hearty, fresh and fuss-free. Served with a punchy homemade salsa and crispy bacon, this dish always disappears fast!
Ingredients
- 12 eggs
- 2 cups (500g) cheese, grated
- 1⁄2 cup chopped fresh chives or spring
- onions
- 12 cherry tomatoes, halved
- Chopped fresh basil, to taste
- 1⁄4 cup water
- Salt and pepper, to taste
- Optional: Chopped ham, or other vegetables
Directions
- Preheat the oven to a moderate temperature (around 180°C / 350°F).
- Grease two baking dishes suitable for omelettes.
- Arrange the cherry tomatoes and optional veggies or ham evenly across the dishes.
- Crack the eggs over the top and season with salt and pepper.
- Add 1⁄4 cup of water.
- Using a fork, gently break the egg yolks and loosely mix all ingredients in the dishes.
- Sprinkle grated cheese over the top of each dish.
- Bake in the oven for 30-45 minutes or until the omelette is well set and golden brown.
Note: Avoid overcooking, as it can cause the omelette to turn green.
Serving suggestion
- Cut the baked omelette into wedges or squares.
- Arrange on a serving platter and serve alongside crispy bacon and fresh salsa in a bowl for dipping or topping.
Tips
- Use fresh herbs like basil or parsley for extra flavour.
- For a vegetarian option, replace ham with more veggies like diced bell peppers or mushrooms.

prehistoric mystery on the Jurassic Coast
Swanage Bay on the Jurassic Coast in Dorset
Another coastal corner of Dorset is making headlines of a very different kind! At Durlston Bay near Swanage, part of the Jurassic Coast World Heritage Site, a university student has made a discovery scientists are calling “remarkable”.
During a routine field trip, 22-year-old Benjamin Weston discovered the fossilised jawbone of a previously unknown prehistoric mammal. The find – now named Novaculadon mirabilis – dates back an astonishing 145 million years, placing it alongside the age of dinosaurs.
It’s another reminder that here in Dorset, even a casual walk can turn into something truly extraordinary!
