Cottage Corner: A Peek Into Our Organic Veggie Patch

At Well Cottage, the journey from garden to plate is as fresh and flavourful as it gets. Our organic vegetable plots, polytunnels, and herb planters are brimming with homegrown delights – all nurtured with care and harvested just steps from the kitchen.
Throughout the year, we grow a variety of seasonal produce, each chosen to complement Laura’s delicious, garden-inspired menus. Root vegetables like parsnips, beets, onions, celery, and Brussels sprouts make hearty, comforting winter dishes, while crisp lettuces, rocket, and cabbages brighten up springtime salads.
When summer arrives, the garden bursts with vibrant cherry tomatoes, courgettes, peppers, sugar snap peas, cucumbers, French beans, and artichokes – perfect for al fresco lunches in the garden. And when it comes to a sweet treat, we have nature to thank for juicy strawberries, raspberries, blueberries, figs, and even limes.
Of course, no kitchen garden is complete without herbs. From fragrant basil, dill, and marjoram to robust rosemary, sage, thyme, and chives, our herb planters provide the perfect finishing touch to many of Laura’s signature dishes.
Whether you’re wandering through the veggie patch, snipping some mint for a garden cocktail, or tasting a homegrown cucumber in your picnic lunch, our gardens are here to reconnect you with the simple, satisfying pleasure of fresh, seasonal produce grown with love – and a little help from Dorset’s glorious countryside.

Neighbourhood Notes: St Andrew’s Church, Fontmell Magna

Just a short stroll from Well Cottage stands the beautiful St Andrew’s Church in Fontmell Magna – a peaceful village church with a fascinating history and a welcoming community.
Although the church underwent significant rebuilding in 1862-63, it remains a timeless focal point of village life. Its perpendicular Gothic-style west tower, with its crenellated parapet and four elegant pinnacles, continues to dominate the village skyline.
Inside, the church offers a simple yet elegant space for quiet reflection. The Victorian renovation introduced new architectural elements while maintaining the essence of its medieval heritage. The stained-glass windows, installed during and after the rebuild, cast colourful patterns across the stone floor, while the chancel and nave reflect the craftsmanship of the 19th century.
St Andrew’s has long been a place where history and faith intertwine. The first recorded vicar, Stephen Prewet, served the parish in the early 14th century. However, there is no evidence of a stone-built church before the late 15th century, suggesting the village’s earliest congregations likely gathered in a simpler structure.
Many of our guests enjoy attending a service during their stay, soaking up the peaceful atmosphere and witnessing a living tradition of English rural life. Whether you step inside to admire the architecture, attend a Sunday service, or simply pause to enjoy the tranquillity of the churchyard, St Andrew’s Church offers a quiet, contemplative connection to Dorset’s rich heritage.

Featured Great British TV: Birds Of A Feather

This month, we’re spotlighting a British sitcom that became a household favourite throughout the 90s and beyond – Birds of a Feather.
First hitting screens in 1989, the show follows the lives of sisters Sharon and Tracey, played by Pauline Quirke and Linda Robson, after their husbands are sent to prison for armed robbery. Forced to live together in Tracey’s upmarket Essex home, the duo navigate life’s ups and downs with plenty of laughs, bickering, and memorable one-liners along the way.
Adding to the chaos is their snooty, man-hunting neighbour, Dorien Green, brilliantly portrayed by Lesley Joseph, whose outrageous outfits and scandalous exploits became one of the show’s most beloved features.
Birds of a Feather ran for nearly a decade before taking a break – but it made a triumphant return from January 2014 to December 2020, finding a whole new generation of fans. With its sharp humour and relatable family dynamics, it’s a classic example of British comedy at its best.

Featured Excursion: The 1,000-year-old Sturminster Newton Water Mill

Step back in time and experience a piece of living history with a visit to the Sturminster Newton Water Mill – a working mill that has stood proudly on the River Stour for over a thousand years.
A Mill With a Millennium of Stories
The site of this remarkable mill dates back to Saxon times, with written records appearing in the Domesday Book of 1086. In fact, in 2016, the mill celebrated 1,000 years of milling! This is a testament to the endurance of age-old traditions in Dorset’s countryside.

Unlike many historic mills, Sturminster Newton Mill is still in working order. Wander through its fascinating rooms and floors, where ancient machinery hums gently as grain is ground into flour – just as it has been for centuries. Opt for a guided tour with one of the friendly mill supervisors, who bring the building’s history to life with engaging stories of its industrial and social past.
A Riverside Retreat
Set on the peaceful banks of the River Stour, the mill is surrounded by scenic countryside. This makes it the perfect spot for a leisurely picnic – Laura will prepare a basket of gourmet goodies and Nathan will set everything up for you. Afterwards, take a riverside walk, watch the water turbine in action, and soak in the tranquil atmosphere of this idyllic spot.

Visit on a milling weekend to watch flour being produced before your eyes – and don’t forget to pick up a bag of freshly milled, stone-ground flour as a unique memento of your day out.

Featured Recipe: Laura’s Cheese & Truffle Soufflé with Walnut & Apple Salad

(Serves 4 – 6)
- Prep time: 20 Min
- Cooking time: 20 – 25 Mins
Ingredients
For the Soufflé
- 50g (3½ tbsp) unsalted butter, plus extra for greasing
- 50g (⅓ cup) plain flour
- 300ml (1¼ cups) whole milk, warmed
- 100g (1 cup) mature cheddar cheese, grated
- 50g (½ cup) Gruyère cheese, grated
- 1 tbsp truffle oil (or to taste) and freshly grated truffle
- 3 large eggs, separated
- ½ tsp Dijon mustard
- Salt and pepper, to taste
- 1 pinch of nutmeg
For the Walnut and Apple Salad
- 1 large apple (e.g. Granny Smith), thinly sliced
- 50g (½ cup) walnuts, toasted and roughly chopped
- 2 cups (60g) mixed salad leaves (e.g. rocket, watercress, or baby spinach)
- 1 tbsp extra-virgin olive oil
- 1 tsp balsamic vinegar
- Juice of ½ lemon
- Salt and pepper, to taste
Directions
For the Soufflé
- Preheat the oven: Preheat the oven to 200°C (400°F). Grease 4-6 ramekins with butter and dust lightly with flour.
- Make the base: In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes to make a roux. Gradually whisk in the warmed milk until you have a smooth, thick sauce.
- Add the cheese: Remove the pan from the heat and stir in the cheddar, Gruyère, truffle oil, grated truffle, mustard, and a pinch of nutmeg. Season with salt and pepper. Allow to cool slightly.
- Fold in the eggs: Once slightly cooled, whisk in the egg yolks, one at a time, until fully incorporated.
- Whip the egg whites: In a clean bowl, whisk the egg whites until they form soft peaks. Gently fold the egg whites into the cheese mixture in three batches, being careful not to knock out the air.
- Bake: Divide the mixture evenly between the prepared ramekins. Place on a baking tray and bake for 15-18 minutes until the soufflés are risen and golden.
Prepare the Salad
- In a bowl, toss the apple slices, toasted walnuts, and mixed salad leaves.
- Drizzle with olive oil, balsamic vinegar, and a squeeze of lemon juice. Season with salt and pepper to taste.
Serve
- Serve the soufflés immediately, garnished with a light drizzle of truffle oil (optional).
- Plate alongside the fresh walnut and apple salad for a perfect balance of rich and crisp flavours.
Tips
For perfect soufflés, avoid opening the oven during baking to prevent them from collapsing. Grate the cheese finely for even melting.
